Cauliflower Arancini


Arancini are a traditional Italian dish consisting of fried rice balls with a savory filling. There are many versions of arancini, but we LOVE this cauliflower version. First, it’s meatless. Second, it’s air fried = healthier. Third, it can be an entire meal or an amazing appetizer for around 200 calories! You can’t come up with a reason NOT to make these.

Spinach Artichoke Dip


Spinach artichoke dip has always been one of my all time favorite dishes. This recipe is simple and full of flavor with a hint of spice. Play around with the cheeses to match your preferences. You can also substitute in low fat cream cheese and sour cream for a healthier option.

Tomato Basil Bisque


Quite a simple soup, but it's a world of flavor! This can be eaten as a stand alone lunch or dinner, as a side, or as an appetizer. Pairs wonderfully with a baguette or dinner roll if you are craving some extra carbs. And like most of my favorite recipes, it reheats well! Enjoy.
